Mix the two types of chips if serving for 4 people or use one bag if serving for 2 people.
For the vegetarian version, drain the beans and the bayo beans, mix them together.
Layer the chips on a platter, layer the mixture of bayo beans and jalapeños on top, pour the Ki Gourmet sauce on top making sure you cover as much as possible of the corn chips
Sprinkle Oaxaca cheese (or your choice of yummy grated cheese, crumpled feta), put in the oven under the broiler till the cheese is nice and melted – warning this dish can be addictive!
Serve the nachos with a side of guacamole, no Mexican dish is ever complete without some guac!
Use any leftover Ki-Gourmet sauce as a dipping sauce.
If you like to add some protein to the dish you could alternatively use the Ki Gourmet sauce to marinate or baste the meat of your choice – try using it to make pulled pork on the barbie instead of your usual rub. No promises, but it will blow you away!
