El Cielo Burrito Bowl


  • El Cielo White or Blue Tortilla Corn Chips
  • 1/3 cup El Cielo Bayo Beans
  • 1 cup Ki Gourmet - La Adelita Chipotle Chili Sauce
  • 1 cup uncooked rice
  • Shredded Chicken
  • 3 cups chopped lettuce
  • 1 can whole kernel corn, drained
  • 2 tomatoes, diced
  • 1 avocado, halved, seeded, peeled and diced
  • 2 tablespoons chopped fresh cilantro leaves



  • In a large saucepan of 1 1/2 cups water, cook rice according to package instructions; let cool and stir in the chipotle sauce; set aside.
  • In another pan, toss the shredded chicken with some salt and pepper
  • To assemble the bowls, divide rice mixture into serving bowls; top with lettuce, corn, bayo beans, tomatoes, avocado and cilantro and the tossed chicken
  • Add our amazing Tortilla Corn Chips on top
  • Optionally, drizzle with chipotle cream sauce for a bit of yummy decadence
