Cochinita pibil is a traditional Mexican dish, specifically from the Yucatán Peninsula, consisting of marinated pork slow-roasted until tender. Its key ingredients are pork shoulder, adobo style paste, orange and lemon juices.

Marinate for 1 hour (6+ hours ideal)
Ingredients:
Cochinita Pibil Tacos
- 1 x Cochinita Pibil Adobo style 185g
- 1 x Tortillas - Light Flavour White Corn 14cm
- 1 x 1kg your favourite meat (pork is best!), chicken or fish (seasoned with salt and pepper)
- 1 x Lime Juice
- 1 x Cup Orange Juice (with pulp)
- Salt
- Pepper
Pickled Red Onion
- 1 x Red Onion cut in long slices
- 1 x 3/4 cup white vinegar
- 1 x 3/4 cup water
- 1 x 1tbsp salt
- 1 x garlic clove
- Pepper
- Pinch of sugar (optional)
Cooking instructions:
- Dissolve the Cochinita Pibil Adobo style with 1cup of orange juice and the juice of 1 lemon.
- Marinate 1kg of your favourite meat, chicken or fish (seasoned with salt and pepper) and this mixture and rest for 1hr (the longer the better)
- Bake in the oven or cook on the stove (slow cooker is best!)
- Serve on warmed up Tortillas - Light Flavour White Corn 14cm
- Add pickled red onions and a few drops of the Natural Green Habanero Sauce on top
